I call it Chicken and Rice Soup... but feel free to help me come up with a more appropriate name. Oh and for the record, my hubs was very apprehensive when I told him that dinner was made up out of my own imagination. However. HOWEVER! He admitted that the soup was DE-LISH-OUS!
In a soup pot, saute the following in olive oil:
Onion
Bell pepper (I used a combo of red, yellow, and green b/c I had all those colors frozen in the same bag. I used maybe 2/3 of a pepper total)
Season with garlic salt, chili powder, cumin (I don't measure... just add what looks right, or if you can't be that free then add maybe a teaspoon of each. That's totally a guess.)
Cooked chicken (had maybe 1 1/2 cups of left over diced cooked chicken in the freezer)
1 can of tomatoes
Some left over corn (from the fridge... maybe 1/2 c.- ish... maybe a little more)
Black beans
1 c. brown rice
Cover with chicken stock (or a combo of stock and water)
Season with salt and pepper
Let it simmer until the rice is done. For brown rice that takes about 45 minutes.
I put cheese and sliced avocados on top and it was fantastic... if I don't say so myself. I will be making this again.
Side note: The longer this sits, the more juice is soaked up by the rice. You may have to add more water or stock, whichever makes your heart happy.
