It's starting to get "hot" here. (Hot in Kansas City is like mid to upper 80's. I realize that makes everyone in TX and LA hate me, but remember that I hate all of you in the winter time.) Anyway, in our old house the kitchen gets really hot when I do too much cooking. So, I need everyone's best "Keep your kitchen cool" recipes.
My creativity is feeling limited this morning, but I need to go to the grocery store and I need help. So please share! Quickly. :)

Here's my favorite. It does use the stove, but only for about 5 minutes, so it's not bad. And definitely NOT the oven.
Black Bean Soft Tacos
Canned black beans (or if you feel compelled to throw some dry beans in the crock pot in the morning, that works too)
Instant rice (white or brown, whatever suits your fancy) Could also use left over rice from another meal
Canned whole kernel corn
Throw those three into a skillet and heat stirring until warmed throughout. Warm some flour tortillas in the microwave, then put heaping spoonful of mixture on tortilla. Top with taco sauce, plain yogurt (trust me!), and shredded cheese. Delish!
Oh and let me know if you get any other good ones. Heat isn't my problem as much as E-A-S-Y.
Oh, and another fave (not sure what is up with my mexican kick) is chicken soft tacos in the crock pot (that's doesn't make your kitchen hot, right?)
Put three or four chicken breasts in the crock pot topped with a packet of taco seasoning and a half a cup of salsa and after about 3-4 hours, simply shred the meat and make tacos.
Crock Pot pork tenderloin
pat a pork tenderloin with black pepper and put it in the crock pot.
scoop a cup or 2 of brown sugar on it. Dump a can of crushed pineapple and it's juice. Sprinkle with 1-2 cups of craisins or dried cranberries. It is really yummy!
We also do quesadillas pretty frequently with precooked chicken cheese and whatever else you like on a quesadilla. We cook them in a frying pan on medium for about 3 minutes/then flip them.

Lori and Heather... Yum. And thanks. Lori, I have a similar chicken taco recipe but I stir sour cream into it after shredding the chicken. It's yummy!
Crissy, I love that method too, except our grill is currently out of commission. It needs a little TLC before we can implement it for the summer.
